Beer is special to us. Done correctly and brewed with expertise, beer is an elegant and worthy libation, on equal footing with wine as a beverage with unique and enticing character. We’ve worked hard on our craft, dedicating ourselves to the art of brewing. This isn’t a thing we decided to do on a whim. Each of our brewers has committed themselves to a career in brewing the best beer possible and have devoted their working lives to this pursuit. You can meet them here.
Our beer program consists of two distinct divisions:
Our Clean Program – Here you’ll find the finest ales and lagers, fermented in stainless steel vessels. These are the beers you’ll find in the market and include IPA’s, Stouts, Pilsners, and many others, including our core CMYK beers and PMS beers.
Our Farmhouse Program – Here we seek to create beers that represent the Belgian and French countryside breweries we love for their esoteric and special styles of ale. Here, old world brewing methods and time honored traditional lagering and aging techniques combine to create unique and distinctive ales and lagers. All these beers have aged a minimum of 6 months in barrels in our wild room. Some ales need more time - our Méthode Traditionnelle beers have aged 2-3 years in wine barrels. For many of these beers, we carefully choose and blend young and more mature barrels until the perfect depth of flavor is achieved. In the Bindery, beer reconnects with nature’s influence. The time and patience required to create these beers is rewarded by the individuality expressed by each.
